These funny looking things are a lifesaver for our family’s special autism spectrum diet. We avoid gluten, casein, corn, and sugar, to name the ‘big ones.’
Having a little home baked sweet means alot to me- I have always enjoyed baking and actually worked in a bakery before I became sick and needed to go gluten free.
This little cookie is pretty plain, but also easy- and it is a great dunker!
Vanilla Cookie Recipe (Makes 1 Doz.)
1 Cup Brown Rice Flour
3/4 Cup Tapioca Starch
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Teaspoon Guar Gum (Or Xanthan Gum)
Mix above dry ingredients in a bowl, then add:
1 Teaspoon Pure Vanilla Extract
1/2 Cup Light Tasting Olive Oil
1/2 Cup Honey
Mix it all up. Form dough into small balls and flatten them into cookie shape. Place on ungreased cookie sheet.
Bake in 325 degree oven for 12 minutes.
Tip: Use the measuring cup that was used for the oil to also measure the honey afterwards. The oily measuring cup will cause the honey to fall right out.
