A fellow gluten free friend told me that she is allergic to coconut as well as gluten, (and therefore coconut oil.) After just having enjoyed my recent vanilla cookie variation, I felt sad for her!
Today I am sharing another fabulous variation of my versitile Vanilla Cookie Recipe. This one is tasty and special- without the coconut oil. It also happens to be gluten free, casein free, corn free, and refined sugar free. The proces is super simple.
The main player is once again, this:
Simply Fruit Jam that is sweetened only with fruit.
First, make the Vanilla Cookie Recipe.
Second, fill a mini muffin pan with the dough. Fill the cips nearly full, but not all the way.
Third, make a well in each by sticking a finger in the center of each one.
Fourth, fill the wells with jam. It will take about 1 teaspoon or less for each one.
Lastly, bake at 325 degrees for 12-14 minutes.
These come out of the mini muffin pan pretty well after cooling for awhile. I personally can’t resist these and they never last long in my house. 🙂
