Guest Recipe: {Autoimmune Paleo} Chicken and Vegetable Stew

Today it is snowing great big lazy flakes. They are usually a delight to watch as they gracefully decend, and I would be enjoying them a whole lot more- if it was December or January and not mid April! I know my desert valley needs the moisture, but good grief!

On an unexpectedly chilly day I can think of no better meal solution than this warming hearty stew recipe by Lauren of Empowered Sustenance.

I have really enjoyed Lauren’s blog for some time. Her recipes are fabulous, but really the biggest take away for me is the  inspiration I gain. Lauren’s story is illuminating. She has found and followed her own path back to health and shares the knowledge she has gained with others. This girl has grit and I love that.

About this recipe: One thing that you will notice is that it uses some vegetables that many of us don’t eat everyday.

Namely-

beets! Also butternut squash. (And it is all so yummy and creamy combined with the coconut milk… mmmm.)

This recipe gives us that opportunity to get those things into our diet. This picture really does not do this stew justice, but let me tell you, the hearty notes of beet combined with the sweet ones from the carrot are calling me just by looking at it.

{Autoimmune Paleo} Chicken and Vegetable Stew Recipe

1 lb. carrots, chopped into 1/2 inch pieces

2 packages of skinless, boneless chicken breasts

1 can of full-fat coconut milk

1 small butternut squash, peeled and diced (or 1 or two packages of frozen butternut squash, chopped into 1/4 inch pieces)

1 package frozen beets or 2-3 large fresh beets, peeled and sliced

Salt, pepper, a splash of apple cider vinegar, and other desired seasonings

In a CrockPot, layer the ingredients in the order listed.
Cover and cook on LOW for 6-7 hours.
If desired, portion into individual serving sizes and freeze.
